Live Edge Black Walnut Cutting Boards - Kaufmann Mercantile

Made from hand-selected logs, these wood boards feature the color shift that occurs between heartwood and sapwood at the edge of a black walnut tree. Each board is dipped in water three times during the sanding process - this stabilizes the wood to prevent splintering and fraying for a long-lasting, smooth surface. The slabs are burnished to create a satiny texture and then oiled to highlight the natural graining pattern.  

The live edge refers to the patterns in the wood’s outer rings—the area just beneath the bark that is usually trimmed off in production. This woodworker retains the live edge in order to maintain the unique character of each and every single piece of wood. 

Use & Care

Keep the board clean by washing with soap and water. (Not too hot or it will strip the beeswax coating.) Avoid letting the board stand or soak in water or the dishwasher. Disinfect occasionally with vinegar and baking soda or sea salt. For stubborn odors, rub board with a fresh lemon and let sit overnight before rinsing.

If deep scratches develop, lightly sand surface in direction of the grain, and apply oil. You can also revive the surface occasionally with food-safe mineral oil. If cared for well, the board will develop a silky patina over time.

Production & Design

Designer Jessica Wickham works with a small team of artisans in Beacon, New York, to turn dead and downed trees in the Hudson Valley into one-of-a-kind furniture pieces that celebrate the pattern, graining, texture and natural edge of the tree.

The live edge is typically cut off to create uniformity, but Jessica and her team aim to emphasize the individual sinews and growth rings in each piece of wood. They maintain an inventory of over 10,000 board-feet of kiln-dried natural edge slabs, featuring the hardwood species common to the northeastern deciduous forest: black walnut, white oak, black cherry, white ash and red elm, among others.
